Tapioca Beiju Recipe

Ingredients for making tapioca Beiju:

 500 grams of tapioca gum or sweet powder

 Water

 1 pinch of salt

 stuffing to taste

How to make tapioca Beiju:

To prepare tapioca beiju you need tapioca gum, available at any supermarket. Make sure the gum you are using is dry or moistened. Alternatively you can also use sweet powder, in which case you will have to hydrate according to the step below.

If using dry tapioca gum or sweet powder, add a pinch of salt and a little water. Mix it well with your hands until it crumbles (if it's too wet, add more gum).

Whether you're using dry or wet tapioca gum or manioc flour, the next step in tapioca beiju is to sift this "flour" to get only the smallest grains.

Place a frying pan over medium-low heat and spread the smaller grains from the previous step in it. Leave for approximately 1 minute and when you see that the beans have stuck together, turn it over, like a pancake.

After the previous step, you are free to fill your tapioca beiju with whatever you prefer! Some people prefer simple fillings, such as butter and rennet cheese, others use condensed milk or ham and cheese... it's just right! Add the filling and fold the tapioca in half.

Heat the tapioca beiju a little more on both sides and, after that, it's ready to serve, as a snack, main dish or dessert. Enjoy your food!
