Stuffed Lizard Recipe
Lagarto is a type of beef cut, also called armadillo and cowpea in some regions of Brazil. The lizard is one of the best cuts of meat for stuffing and roasting in the oven or pressure cooker. Due to its high yield, it is ideal to serve on a family lunch day or to prepare the week's lunchboxes.

Ingredients for making Stuffed Lizard:
1 kilogram of bovine lizard
1 or 2 long pepperoni sausages
1 chopped onion
4 cloves of garlic
½ cup of white wine
2 envelopes of powdered meat seasoning
2 tablespoons Worcestershire sauce or soy sauce
2 tablespoons of sunflower oil
2 bay leaves
Black pepper
salt

How to make Stuffed Lizard:
To prepare this pepperoni stuffed lizard recipe, take the lizard and sausage. If your lizard doesn't fit in the pressure cooker, cut it in half, in which case use two sausages instead of just one.
With a sharp knife and cut the meat in half, along its entire length. Season inside and out with salt and pepper, place the sausage inside and close by tying the string. Another option is to make a hole in the center, without opening it in half, and introduce the sausage there - in this case, you don't need to tie it with string.
Prepare the stuffed lizard marinade: In a bowl mix 2 crushed garlic cloves, the wine, Worcestershire sauce or soy sauce, and powdered meat seasoning.
In order for the meat to get better seasoning, make some cuts in it and put it in a plastic bag. Add the mixture prepared in the previous step, tie well and shake to spread the seasoning over the meat. Set aside in refrigerator for 12 hours, shaking 2-3 times.
Tip: If you don't want to use this plastic bag trick, simply rub the marinade into the meat, place it in a bowl, and cover it with plastic wrap. Refrigerate for 12 hours, turning the meat 2-3 times during this time.
After the previous step, it's time to cook the stuffed lizard! Heat a frying pan with the oil and brown the meat on all sides, without the marinade. This will help make it soft after baking under pressure.
Tip: Remove the meat from the marinade about 1 hour before frying it in the pan, so that it gets to room temperature and browns better.
When the lizard is well browned, place it in the pressure cooker. Add the marinade, the onion, the other 2 garlic cloves, the bay leaves and water until covering the meat. Cook for 1 hour, counting after starting pressure.
After the previous step, your lizard in the stuffed pressure cooker is ready! Cut into slices and serve while still hot accompanied by, for example, plain seasoned rice. Enjoy your food!
